Stuffed French Toast This recipe can be adjusted for the number of people being fed. This recipe is for four people. It can be doubled many times for larger groups of people. Liquid ingredients may need to be adjusted to dry ingredients. Prepare this dish the night before.
Spray a small square baking dish with non-stick spray or lightly grease it with butter. Trim the crust from several slices of the raisin bread. Line the bottom of the baking dish with raisin-bread slices. Whip the eggs until light; add the cream, cinnamon, and nutmeg. Incorporate well. Pour approximately 1/2 of the mixture over the raisin-bread slices until saturated but not swimming. In a bowl or food processor, mix the cream cheese, yogurt , and honey until thoroughly incorporated. Gently fold in the blueberries. Spread the mixture evenly over the bread in the baking dish. Cover with another layer of raisin bread. Pour the rest of the egg mixture over the bread. Cover and refrigerate over night. The next morning, preheat the oven and bake at 350-degree F for one hour. Scatter berries over the dish. Cut into squares in the pan and serve hot. Warmed syrup can be offered, but probably won't be needed. This is an excellent protein/carb dish before going skiing. |
